- 20 golive oil
- 1,5 gsalt
- 45 gtahini
- 15 gwhite miso paste
- 25 mllemon juice
- 35 mlcold water
- 8 gmaple syrup
- 3 ggarlic
- 12 gsesame seeds
Instructions
- 1
Prepare the green beans
Wash the green beans, dry them thoroughly, and trim the ends. Cut larger beans in half crosswise.
- 2
Mix the sauce
In a bowl, whisk together the tahini, white miso paste, lemon juice, cold water, maple syrup, and finely grated garlic. Mix until smooth and slowly pourable.
- 3
Toast the sesame seeds
Toast the sesame seeds in a dry skillet over medium heat for 1 to 2 minutes. Shake the skillet often; once the seeds are fragrant and lightly golden, transfer them to a bowl.
- 4
Sear the green beans until browned in spots
Heat a large skillet over medium-high heat. Add half of the olive oil and half of the green beans in a single layer. Cook for 3 to 4 minutes without stirring often, until browned in spots, then toss and cook for another 2 minutes. Transfer to a plate and sear the remaining oil and green beans in the same way. Season with salt.

Finish and serve
Arrange the warm green beans on a serving plate, drizzle evenly with the sauce, and sprinkle with the toasted sesame seeds. Serve immediately, while the beans are still warm and crisp-tender.
