Instructions

Follow the steps and taste along the way.

  1. Prepare the peaches and dressing

Wash and dry the peaches, halve them, and remove the pits. Brush the cut side of each half with olive oil. In a small bowl, mix the lemon juice with the honey.

  2. Grill the peaches

Heat a grill pan or heavy skillet over medium-high heat. Place the peaches cut-side down and cook for 2 to 3 minutes without moving them, until distinct golden-brown marks form on the cut side. Turn them over and cook for 1 more minute, then transfer them to a plate.

  3. Grill the halloumi

Pat the halloumi dry and cut it into 8 slices, approximately 1 cm thick. In the same hot pan, cook the slices for 1 to 2 minutes on each side, until the surface is browned and the center remains soft. Do not add salt; the cheese is salty on its own.

  4. Finish and serve

Divide the warm peaches and halloumi between two plates. Stir the lemon juice and honey dressing, then drizzle it evenly over both portions. Add torn basil and black pepper. Serve immediately while the cheese is warm; the lemon balances its saltiness and the honey brings out the flavor of the grilled fruit.
